Preparation of a solution having a given potential alcohol

The fermentation by the yeasts transforms the sugar solution into an alcoholic solution. A given sugar solution will always produce, by fermentation in suitable conditions, the same amount of alcohol. The amount, and thus the concentration, of alcohol obtained from a solution containing a well-known concentration of sugar can therefore be predicted (1 kg sugar produces about 0.6 L pure alcohol).
